When preparation time in cooking is an issue, eating vegan meals can seem to be more difficult. And while take out deliveries can save time, we can’t deny the fact that they cost more. Good thing there are simple vegan meals that are not only delicious but also very easy to prepare. In fact, you’ll only need half an hour (or less) to whip up these healthy meals and enjoy them at your dinner table.

So with no further ado, we give you these 3 delicious 30-minute vegan food recipes.

Spinach, Sausage, And Potato Soup

This is a must-try comforting meal for soup lovers.

What You Need:

  • 1 ½ lbs. of potatoes (quartered)
  • 6 ounces fresh spinach
  • 12 ounces of vegan sausage (chopped)
  • Half a teaspoon of red pepper flakes
  • 2 cloves garlic (minced)
  • 1 cup of diced white onion
  • ½ cup dried oregano
  • ¼ cup cashew cream
  • 4 cups of vegetable broth
  • 1 tablespoon of olive oil
  • Salt and pepper

Cooking Instructions:

1. Heat pan and then add the olive oil, garlic, onion, red pepper flakes, sausage, salt, and pepper. Cook for 8-10 minutes while stirring often to prevent the sausage from sticking to the pan.

2. Add potatoes and then cook for another 2-3 minutes. Stir often.

3. Decrease the heat then add the vegetable broth and let it simmer until the potatoes are tender.

4. Add the remaining ingredients and let it simmer for 5 minutes more. Add salt or pepper if needed.

Lentil Salisbury Steak

What You Need:


  • 2 cups of cooked lentils
  • 2 cups Vital wheat gluten
  • 2 cups vegan breadcrumbs
  • ½ cup vegetable broth
  • 1 tablespoon liquid smoke
  • ¼ cup soy sauce
  • 1 teaspoon olive oil
  • Salt and pepper

(Mushroom Gravy)

  • 8 ounces mushroom (sliced)
  • 3 cloves of garlic (chopped)
  • 3 tablespoon vegan butter
  • 3 tablespoon all-purpose flour
  • 2 cups vegetable broth
  • ½ teaspoon dried sage
  • ½ teaspoon thyme
  • 2 teaspoon olive oil
  • Salt and pepper

Cooking Instructions:

1. Add lentils in a mixing bowl and mashed it until the steak-like texture is achieved. Then add the remaining ingredients for the steak and mix them thoroughly until firm.

2. Form large balls from the mixture and flatten and cook them in an oven (preheat to 425 degrees) for 20 minutes.

3. Add the olive oil in a pan and cook the steak to form a mouthwatering crust.

4. After cooking the steaks, sauté garlic and mushrooms in olive oil for a couple of minutes and then set aside. Then, add the vegan butter and flour and mix then until a thick paste is formed. Now add the vegetable broth, simmer and reduce while adding the spices.

5. Combine the steak and the gravy on a plate and serve.

Red Curry Vegan Mac And Cheese

What You Need:


  • 1 tablespoon cooking oil
  • ¼ teaspoon salt
  • ½ teaspoon garlic powder
  • 2 tablespoon soy sauce
  • 1 block tofu (sliced into 1 inch pieces)

(Cheese Sauce)

  • 1 cup non-dairy milk (unsweetened)
  • 2 teaspoon cornstarch
  • 1 tablespoon red curry
  • 1 ½ shreds of vegan cheddar cheese
  • 1 teaspoon garlic powder

(Other Ingredients)

  • 2 cups macaroni elbows (uncooked)
  • 1 cup kale
  • 3 cups baby spinach
  • ½ teaspoon kosher salt

Cooking Instructions:

1. For the tofu, mix the oil, salt, garlic powder, and soy sauce, then toss the tofu until fully coated by the mixture. Then, heat a pan in medium flame and cook until the tofu is browned. Set aside.

 2. For the sauce, cook the macaroni in a bowl until tender and set it aside. Then, mix a portion of the milk and cornstarch on a separate bowl while slowly adding the red curry. Once the mixture turns into slurry, add the remainder of the milk along with the garlic powder and vegan cheese. Wait until it turns into a smooth cheese sauce before adding the macaroni and the greens.

3. Combine the mac and cheese with the tofu on a plate and serve.
