What You Need:
- 1 ½ lbs. of potatoes (quartered)
- 6 ounces fresh spinach
- 12 ounces of vegan sausage (chopped)
- Half a teaspoon of red pepper flakes
- 2 cloves garlic (minced)
- 1 cup of diced white onion
- ½ cup dried oregano
- ¼ cup cashew cream
- 4 cups of vegetable broth
- 1 tablespoon of olive oil
- Salt and pepper
Cooking Instructions:
1. Heat pan and then add the olive oil, garlic, onion, red pepper flakes, sausage, salt, and pepper. Cook for 8-10 minutes while stirring often to prevent the sausage from sticking to the pan.
2. Add potatoes and then cook for another 2-3 minutes. Stir often.
3. Decrease the heat then add the vegetable broth and let it simmer until the potatoes are tender.

- 2 cups of cooked lentils
- 2 cups Vital wheat gluten

- 1 tablespoon cooking oil

- 1 cup non-dairy milk (unsweetened)
- 2 teaspoon cornstarch

Once the mixture turns into slurry, add the remainder of the milk along with the garlic powder and vegan cheese. 3. Combine the mac and cheese with the tofu on a plate and serve.
